Mexican cuisine began about 9000 years ago, when agricultural communities such as the Maya formed, domesticating maize, creating the standard process of corn nixtamalization, and establishing their foodways. Mexican cuisine is as complex as other ancient cuisines, such as those of India, China and Japan, with techniques and skills developed over thousands of years of history. We are proud to be one of the first and leading places serving Mexican in the city of Taj.
